Christmastree Cupcakes: Chocolate Cupcakes with Vanilla Cream Cheese Frosting

If you need to impress a whole room of people at a Christmas party, those chocolate cupcakes with green cream cheese frosting are surely a looker. And although they look quite impressive, they are actually simple enough to make. So let’s get right to it:

Chocolate Cupcake Dough:

Ingredients (for 12 cupcakes):
170 g flour
150 g sugar
3-4 tbsp cocoa powder
1 teaspoon baking powder
2 pinches salt
2 eggs
1 dl milk
100 g butter (room temperature)
100 g dark chocolate, in cubes

Preparation:
Whisk eggs, milk, sugar and butter until combined. Add flour, cocoa powder, baking powder and salt and whisk again. Fold the dark chocolate cubes under the mixture.
Line your cupcake forms with your paper baking cups and distribute the dough into the forms.
Bake for 23-25 minutes (180 degrees). Take them out of the oven and let them cool completely, before adding the frosting.

 

Cream Cheese Frosting

Ingredients:
Green food colouring (liquid or paste)
150 g fresh cheese (double cream)
150 g butter (room temperature)
380 g icing sugar
Vanilla (I always a fresh vanilla pod, but vanilla sugar or something similar also works)

Preparation:
Combine butter, icing sugar and vanilla and whisk until the mixture is light and airy.
In another bowl whisk the cream cheese until creamy. Gradually combine the two mixtures until the frosting has the right consistency (thick enough to hold its shape but still soft enough to be piped).
Add green food colouring – if you use a paste the colour will get a bit more intense, I used liquid food colouring. Also, if the added liquid changes the consistency, add another 2-3 tablespoons of icing sugar and whisk until everything is combined. Pour the mixture into a piping bag and pipe it onto your cool cupcakes.
