The holiday season is not over just yet, so here’s an idea for a delicious little appetizer for your new year’s eve party:
Salmon Roses with Horseradish Mousse on Roasted Potato Slices
You can use a store bought horseradish mousse or you can use the recipe below.
Ingredients (as an appetizer for 4 people):
1 packet of smoked salmon
3 potatoes
tablespoons of olive oil
salt
paprika powder
80g sour cream (80g)
1 dl heavy cream
1 sheet of gelatin
30g of fresh horseradish or 3-4 tablespoons of horseradish paste
onion sprouts
Preparation:
Finely slice the potatoes, mix them in a bowl with the oil and season with salt and paprika. Bake them in the oven for ca. 20-22 minutes (180 degrees) or until crispy. Let them cool.
Let the sheet of gelatin soak in water for 5-10 minutes, warm 2-3 tablespoons of heavy cream, add the sheet of gelatin and whisk it until it is completely dissolved.
Combine it with the sour cream and the horseradish. In another bowl, whisk the rest of the heavy cream until stiff and carefully add it to the sour cream horseradish mixture. Let the mixture cool for 3-4 hours before pouring it into a piping bag.
For plating up, cut a stripe of your salmon, roll it into a flower like shape (or anything that ressembles a role, really) and place it on top of a potato slice. Pipe a dollop of the horseradish mousse next to your salmon rose. Decorate with onion sprouts to taste –
