Do you like chickpeas? If yes, you will not be disappointed with these: Crispy chickpeas seasoned with curry – a recipe ripe for vegan snack heaven!
1 can of chickpeas (ca. 240g)
2-3 tablespoons of olive oil
1 teaspoon of salt
1/4 teaspoon of curcuma
1/4 teaspoon of powdered ginger
1 teaspoon of curry powder (spicy or mild)
Preparation (5 Min Prep, 40 Minutes baking):
Preheat the oven to 190° Celcius.
Drain the can and dab the chickpeas with household paper until they are quite dry.
In a bowl, mix the chickpeas with the olive oil and the salt.
Place the chick peas on a flat baking tray and bake in the oven for 20 minutes. Remove the baking tray briefly and shake a little to turn the chickpeas. Continue baking for 20 minutes (total baking time about 40 minutes or until the chickpeas are crispy).
Take the chickpeas out of the oven and let them cool down a little. Mix the (still warm) chickpeas in a bowl with the spices. Season to taste – and enjoy!
Tipp 1: Do not add any spices (other than salt) before roasting the chickpeas as the spices might get burned in the oven which will leave a bitter taste and they will also hinder the process of getting your chickpeas crispy!
Tipp 2: You can store the chickpeas for a couple of days at room-temperature. Do not put them in the fridge as they will get soggy quickly.
