Low Carb Chocolate Peanut Butter and Almond Bites

Yes, peanut butter – yes, chocolate – yes, low carb – and yes, delicious and bitter sweet – and most importantly: Those low carb peanut butter and chocolate almond bites require only 15 minutes of work and no baking! So let’s get right to it –

Ingredients:

200g of dark chocolate (min. 70%)
4 tablespoons of peanut butter (smooth)
200g of whole almonds (roughly chopped)
6 tablespoons of birch sugar (xylitol)

Preparation (ca. 15 minutes):
Cut the chocolate in rough pieces, place it in a metal bowl. Place the bowl above simmering water and slowly let the chocolate melt while stirring. Add the peanut butter and the birch sugar, stir until everything is melted and smooth. Take the bowl away from the heat, add the almonds and mix everything together. Spread the mixture in a tray (this can vary in size depending on how thick you want the bites to be, mine was 23x16cm) and put it in the fridge to cool for at least 2-3 hours or overnight.

When cooled and hardened, cut into bite sized pieces (I made ca. 30 pieces)- or small “chocolate bars” if you want – and enjoy!

 

Tip: In an airtight container in the fridge the chocolate peanut butter almond bites are storable for 3-4 weeks.
