It’s windy and cold outside, and warm and cozy inside. For me, there is in such moments nothing better than to take a little time for myself and bake something delicious. And since I’ve become an absolute fan of coconut in the last few weeks, this recipe has become a new favorite: Coconut Chocolate Chip Cookies!
Ingredients (20-30 Cookies, depending on the size):
- 250g butter
- 200g sugar (room temperature)
- 100g brown sugar
- 1 packet vanilla sugar
- 2 eggs
- 250g flour
- 200g coconut finely grated
- 1 tsp baking powder
- 1 tsp salt
- 200g dark chocolate (drops or chopped by hand)
Preparation:
In a bowl, mix together the butter and sugar. Add the eggs and continue mixing. Add the shredded coconut, flour, baking powder and salt, mix until combined. Set aside a handful of chocolate drops or chopped chocolate, fold the rest into the mixture.
Chill the mixture (about 30 minutes). In the meantime, preheat the oven to 180° convection. Line 2 baking sheets with baking paper. Form cookie-heaps with a tablespoon, garnish as desired with the leftover chocolate chips. Bake for 9 minutes. Let cool – and enjoy!
