One of my favorite childhood memories are making these really easy, no bake chocolate cornflakes cookies: Yes, they are so easy, even a toddler can do them – there will probably be a mess, of course, but looking at the kitchen after I have been baking, I must admit that I haven’t changed much in that regard.
Now, whether you just need a sweet treat for yourself or you need something to a party treat or give someone a present; these crunchy chocolate treats are done in less than 15 minutes – let cool for a couple of hours or over night and voilà you’ve got your cookies.
Ingredients (ca. 25 cookies, depending on size)
- 200g dark chocolate, chopped
- 20g butter
- 80g Cornflakes (unsweetened)
- 1/2 sachet vanilla sugar (approx. 8g)
- pinch of salt
Preparation:
Line a tray with a baking sheet.
Melt the chocolate in a stainless steel bowl over a pot of simmering water. When melted, add the butter. Mix everything with the cornflakes, vanilla sugar and a pinch of salt.
Use a tablespoon to make little heaps on a baking sheet. Chill in the fridge for 2-3 hours or over night – and enjoy!
Tip I: If you like, you can also decorate the cookies with some shredded coconut before cooling them.
Tip II: You can keep the cookies in an airtight container in the fridge for 1-2 weeks.
