Pommes Duchesse: A festive Potato Side Dish

I love potatos – in any shape and form. And these little mashed potato rosettes are a starter I love to serve at dinner parties or for a festive occasion: Pommes Duchesse!
As they are basically mashed potatoes that are piped into a nice form and baked in the oven for a bit of color, they are not necessarily a hard thing to pull off – but they look quite impressive, so let’s go!

Ingredients (ca. 4 people):
800g potatoes (waxy)
20g butter
2 eggyolks
Nutmeg
Salt

Preparation:
Cook potatoes at medium heat for approx. 15 minutes until soft. Drain potatoes very well, add the butter and drive through the passe-vite or purify with a purifying rod. Let it cool a bit. Add the egg yolks and seasoning and mix everything.
Preheat the oven to 200 degrees.
Place mashed potato mixture into a piping bag and pipe the pommes duchesse onto a baking sheet. Bake for 10-15 minutes until hot and slightly brown.

PS: It goes very well with a piece of meat with merrettich sauce and radish vegetables.
