Swiss Rösti and Gruyere Breakfast Bake

I am in weekend mood – and today that means one thing: Hearty breakfast or brunch comfort food! I opted for a Swiss twist on a potato breakfast bake with Rösti, Cervelat (a Swiss type of sausage) and Gruyere Cheese and – because I am feeling a bit under the weather and not up to any long time cookery, I used pre-made Rösti (there is a variety of premade Rösti in Switzerland, I really like the Migros Original Rösti).

Ingredients (serves 2-4 people):
500g Migros Original Rösti
200g Champignons (diced)
1 onion (finely diced)
20g bacon (finely diced)
1 Cervelat (finely diced)
60g Gruyere surchoix cheese (grated)
0.5 dl of white wine
salt and pepper
chives (optional)

Preparation:
Heat a pan and add the bacon, cervalat and onions. Sautée for 2-3 minutes. Add the champignons, mix shortly, deglaze with the white wine and let the wine cook out completely (ca. 3-5 minutes). Preheat the oven to 200 degrees. Add the rösti to the pan, season with salt and pepper and stir on high heat for another 5 minutes. Fill the mixture into a baking dish, top it with the cheese and bake for ca. 10-15 minutes.

Top with chives – and enjoy!
Tip: I often serve it with a salad on the side or an egg on top.
