Spicy and Creamy Vegan Lentil Curry Soup

2019-03-07-14-22-502079284726495796193.jpgI love lentils – and they are good for you! So today’s recipe is a hearty and vegan bowl of comforting goodness: a Spicy Lentil Curry Soup with Coconut Cream
– and it’s done in less than 30 minutes, a perfect dish for a quick and yummy midweek dinner – so let’s get right to it!

Ingredients (4 people):
1 teaspoon of coconut butter (or any kind of fat)
2-3 cloves of garlic (chopped)
10g ginger (chopped)
2-3 dried chillis (chopped)
1 tablespoon red curry paste
1 tablespoon spicy curry
1l vegetable broth
2dl coconut milk
400g of yellow lentils
1-2 tablespoons of lime juice
salt (to taste)

Preparation (ca. 25 minutes):
Heat the coconut butter in a pot, add garlic, ginger, chillis, and curry paste and sauté shortly. Add the lentils and mix until everything is covered with the curry paste. Add the vegetable broth, reduce heat and let everything simmer for ca. 15 minutes (until the lentils are soft). Add coconut milk and curry powder and purée everything. Add lime juice and season to taste – and enjoy!
