Öpfelchüechli – or Swiss Apple Cake Bites

2020-02-10-12-32-58-381780684415628836853.jpgThis is – literally – the easiest baking recipe I’ve ever made. And it’s delicious, moist and full of warm apple flavor – so let’s get right to it!

Ingredients (ca. 20 Apple Cake Bites):
600g Apples, peeled and chopped into ca. 1 cm sized pieces
1 tablespoon of lemon or lime juice
120g Butter, roomtemperature
1 packet of vanilla sugar
100g sugar
2 medium sized eggs
1 pinch of salt
1 teaspoon of cinnamon
200g flour
1/2 a packet of baking powder

Preparation:
Preheat the oven to 180 degrees C° circulating air.
Peel and chop the apples and mix with the lemon or lime juice.

In a separate bowl, mix the butter with the vanilla sugar and sugar until an even mixture is obtained. Add the eggs and the salt and mix everything for 2-3 minutes.
Add the cinnamon, flour and baking powder and mix until even.

Add the apple pictures and mix into the mixture.
Prepare two baking trays lined with a baking sheet each.
With a tablespoon, measure out roughly 1.5 tablespoon of apple-dough filling and form little mounds.
Put the trays into the oven and let the Apple Cake Bites bake for 15-17 minutes or until the edges are brown. Take them out and let them cool a bit.
Decorate with icing sugar – and enjoy!
